First time ever working with fresh whole fish. Filleted a Flat and a Round fish. Also worked with shrimp, and live mussels, oysters, clams! It was quite a week for this Pisces gal!

When filleting a fish, you want to get all of the get all of the flesh removed without disturbing the digestive track, making sure to remove every bit, leaving just the scales.

This guy didn’t know what was coming, but Chef Jason was humane and ended this guys life with one swift blow, rather than immerse in boiling pot.

And the week ended with numerous dishes all Grilled! Seafood, vegetables, and tempeh!

My marinated grilled tempeh was tasty!
