This summer I had a wonderful evening at my dear friends Troy & Raudel’s home. They know how to entertain! From being super relaxed hosts, listening to groovy tunes in their very cool modern home, to eating an amazing meal and drinking delicious wine surrounded by gorgeous gardens & patio! It was enchanted. They also invited another dear friend Derek – who was celebrating his birthday! We had a blast! I would be remiss if I didn’t mention their adorable doggies Mojito & Onion.
Troy’s Delicious Watermelon Panzanella Salad!
2 + cups of ripe seeded beautiful watermelon
2 cups stale cubed bread(I used sourdough)
1 cucumber seeded sliced
1 bunch basil chiffonade
1/2 read onion thin slice
Dressing:
1/2 cup White wine vinegar
1/2 olive oil
1/2 cup sugar
1 tablespoon whole grain mustard
1.5 teaspoon fresh thyme
1/2 teaspoon red pepper flakes
1/2 teaspoon ground pepper
2 cloves garlic minced
Directions:
Place ingredients in a bowl
Add dressing and toss well!
