1/2 cup Bulgur, 1 cup water
1 cup chopped, seeded English cucumber
1 cup diced plum tomatoes
3 cups fresh chopped parsley
1/4 cup chopped fresh mint
2 green onions finely sliced
1/4 cup olive oil
Juice of 2 lemons
1 clove of garlic minced
1 teaspoon sea salt
Directions:
Cook bulgur ( put bulgur & water in pot bring to boil, cover/simmer 15 min.
Chop all veggies and herbs
Let bulgur cool &
Make dressing:
Mix in bowl olive oil, lemon juice, salt and garlic — whisk well
Assemble everything but bulgur into your bowl and toss.
Add dressing & toss
Add bulgur and stir well to blend well
Enjoy this lovely dish with fresh hummus and pita! I love it!
