Lisa’s Birthday Cake

Let's Get Cooking!

Ingredients & Recipe:

To be honest, baking has always kind of intimidated me. I’m not talking about making a box cake or brownies, but homemade baked goods…forget it!

But in the last couple years, with learning new ways to cook, like “no bake” desserts and the like, I’ve had a more relaxed attitude. And, heck, I’ve failed many a time, but I’m still trying to grow and learn.

So, that said, I did a lot of research into making a Vegan cake. I looked at a bunch of recipes, and here is what turned out well.

My goal was to make my daughter Lisa a homemade vegan birthday cake. If I must say-so myself, it was DELICIOUS!

Ingredients for Cake Batter:

2.5 cups plus 2 tablespoons flour
1 cup plus 5 tablespoons fine granulated white sugar
1.5 tbsp baking powder
3/4 tsp salt
3/4 cup plus 1 tbsp coconut milk (room temperature)
1/2 cup plus 2 tbsp soy vanilla yogurt (room temperature)
3 tbsp hot water
2 tsp vanilla extract
1 tsp apple cider vinegar

Batter Directions:

In large bowl, add flour, baking powder, sugar and salt. Whisk well.
In smaller bowl, add coconut milk, yogurt, vanilla, hot water and vinegar. Whisk well.
Add wet ingredients from smaller into large bowl and stir until it thickens and is blended well
Grease 2 8-inch circular cake pans with coconut cooking spray
Evenly distribute batter into the cake pans
Bake in preheated oven at 350f for 25 minutes or until a toothpick comes out clean

Ingredients for Chocolate Frosting

1 cup unsweetened cocoa powder
1 stick vegan butter
1 tsp vanilla extract
1 pinch of sea salt
3 cups powdered sugar
1/3 cup plus 1 tbsp almond milk

Frosting Directions:

In a bowl add cocoa powder, butter, 2.5 cups powdered sugar, vanilla extract, salt, and half of the almond milk. Use hand mixer and mix well.
Gradually add the remaining 1/2 cup of sugar and remaining almond milk

Let cake cool until it is room temperature.
Add frosting.
