Lindsey’s Thai-Licious Night!

Let's Get Cooking!

Ingredients & Recipe:

2 tablespoons Safflower oil
2 cups of broccoli florets
3 medium shitake mushrooms sliced
1 large shallot finely sliced
2 tablespoons fresh minced Ginger
2 + tablespoons Red Curry Paste
2 cups Coconut milk
1 red & 1 yellow pepper julienned
1 cup chopped daikon radish
2 + tablespoon HoloHolo honey
Shake of 2 of Red Pepper flakes
Drizzle of Siracha (for extra spice if you like)
1 cup of chopped cashews

Directions:
Saute shallots in safflower oil
Add minced ginger & red curry paste and stir and coat well
Add coconut milk and stir well until red color is evenly mixed
Add all veggies except Broccoli
Boil water and cook ramen noodles for 3 minutes — then place in bowl
Cover noodles with heaping ladles of veggies & red curry coconut goodness
Add as many chopped cashews as desired, perhaps a drizzle of Siracha!
