This velvety chocolate pudding is to die for, really! The coconut milk is lush and the delicate hint of the flavor is just perfect!
2 cups Coconut milk
3.5 tablespoons cornstarch
1/4 cup coconut sugar
4 tablespoons Cacao powder
1 pinch of salt
1 teaspoon vanilla
2 tablespoons peanut butter
1/4 cup vegan chocolate chips
Directions:
Whisk all ingredients except vanilla, cacao powder & peanut butter until smooth
Turn on heat medium low and whisk in remaining – peanut butter, vanilla and chocolate chips
Continue to whisk and bring to a boil, turn down heat and whisk one more minute.
Pour in a pretty bowl or martini glass and chill in fridge 1 hour (cover with plastic)
