Lindsey’s rockin’ Plant-Based Chocolate Peanut Butter Cups

Let's Get Cooking!

Ingredients & Recipe:

3/4 Cup of Organic Peanut Butter
1/3 Cup of Coconut Sugar
1 teaspoon Vanilla
1 teaspoon Maple Syrup
1/2 teaspoon Salt
1.5 cups Organic Vegan Dark Chocolate Chips (Enjoy Life Brand)
2 teaspoon Coconut oil
Mini foil liners

Directions:
Mix first 5 ingredients well
Melt in microwave chocolate chips & oil for 1-1.5 minutes. Stir until smooth
First layer 1 teaspoon of chocolate mixture into liner.
Freeze 10 minutes
Form a small ball of peanut butter mixture (little larger than a Dime)
Press peanut butter ball on top of chocolate frozen layer
Last, one more layer of chocolate on top of Peanut butter.
Freeze 10 minutes!

Enjoy this delicious treat — keep in the freezer up to 3 weeks….for me its a day or two!
