Ingredients & Recipe:

2 Cauliflower Frozen Pizza Crusts:

Pizza 1 Ingredients:
Pesto, grape tomatoes, banana peppers & Vegan parmesan cheese:
Homemade Pesto recipe in video “Lindsey’s Vegan Pesto Pasta”

Directions:
* Spread pesto over crust
* Cut tomatoes in half and cover pesto crust
* Add as many yellow banana peppers
* Fresh ground pepper & as much Parmesan cheese!

Pizza 2 Ingredients:
2 tablespoons Olive oil
2 cups of shiitake mushrooms chopped
1/2 red onion diced
1 large clove of garlic minced
10-12 sun dried tomatoes – julienne cut
Fresh ground pepper & as much Parmesan cheese!

Directions:
* Saute mushrooms, onion & garlic in olive oil 4-5 minutes – add 1/4 water to prevent scorching
* You want the mushrooms to reduce and turn golden, & onions to begin caramelizing
* Drizzle 2 tablespoons olive oil on cauliflower crust, spread with pastry brush to cover entire crust.
* Spread sauteed mushroom, onion & garlic over entire crust
* Place 10-12, or as many as you like over crust.
* Fresh ground pepper & as much Parmesan cheese

Bake 10-12 minutes (Follow instructions on Frozen pizza crust box)

Enjoy Pizza and feel free to make it your own adding perhaps black olives, grilled peppers…anything you love!
