I love Mexican food & I love the ease of a rich flavorful one pot dish!
Olive oil 1 tablespoon
1 cup quinoa
1 cup veggie stock
1large jalapeno pepper fine diced
1 ripe avocado chopped
1 lime juiced
2.5 cloves large garlic minced
1 (15 ounce) can organic black beans (rinse/drain well)
1 (15 ounce) can organic sweet corn
1 (14.5 ounce) can fire roasted tomatoes
1 teaspoon smoked paprika
1/2 teaspoon of both cumin & chili powder
2 pinch of salt
Small bunch fresh cilantro
Directions:
Add oil to large pan turn heat on
Add jalapeno & garlic and saute medium flame one minute until fragrant
(careful not to burn garlic)
Add Remaining ingredients, stir well blending corn, beans, tomatoes, quinoa, stock and spices.
Bring to simmer and cover.
I like using a glass lid so I can see when its done ( aprox. 20 minutes)
Add chopped avocado, fresh cilantro and juice of 1 lime and stir!
This is so satisfying and mucho delicioso!
Feel free to add my homemade guacomole, or your favorite salsa and chips on the side!
