Latke is a Yiddish word which means “little pancake”. It’s a delicious food that originated in Eastern countries and was known as a peasant food. It has been a Jewish custom dating back to the 14th century to celebrate Hannukah in making this traditional food. These simple fried potato and onion pancake are typically topped with applesauce or sour cream. I have a plant-based sour cream that is divine! They are simply delicious!
2 medium size russet potatoes
1 medium sweet potato
1 small onion
1 tablespoon white flour
2 tablespoon corn starch
3/4 teaspoon sea salt
1/2 teaspoon ground pepper
1 teaspoon onion salt
Bunch green onions
Onion salt1 teaspoon divided
2 tablespoons canola oil
1 container cashew milk non-dairy plain yogurt
Apple sauce
Directions:
Shred potatoes with cheese grater and lay on paper towels. Blot gently
Shred one onion and also lay on separate paper towel to blot
Add above in a bowl and gently toss with fingers
Add flour, corn starch, salt, pepper & 1/2 teaspoon onion salt
Form little ball in your hand and squeeze remaining water, forming into a ball (golf ball)
You should 12-14 pancake balls
Heat a heavy pan, and then add oil medium flame
Place 4 at a time in your pan and press with spatula to flatten
Flip like a pancake when perimeter looks golden brown
When both sides are golden place on a plate & gently blot oil.
Fine chop green onions
Top your Latke Pancakes with one or both toppings below:
*** “Sour Cream dip”
1- 5 ounce container of cashew dairy free plain yogurt into bowl
Add fine diced green onions, & 1/2 teaspoon onion salt
Add additional salt & pepper to taste.
Place a teaspoon of cream on your Latke
*** Apple Sauce ( 1 teaspoon on top of Latke)
