These delicious muffins are super moist and made with wholesome ingredients. I love these for breakfast with a dollop of almond or peanut butter, or for a healthy delicious afternoon snack!
3 very ripe bananas
1/2 cup maple syrup
1/2 cup melted coconut oil
1 teaspoon vanilla
1 cup of flour
1 cup rolled oats
1 teaspoon of both Baking soda & baking powder
1 tablespoon ground cinnamon
1/2 teaspoon sea salt
1/4 cup of vegan chocolate chips ( if you like, can also use chopped walnuts)
Directions
Mix first 4 ingredients, mashing bananas well but still a little chunky in a medium bowl
Mix remaining dry ingredients
Combine wet & dry and stir well with spoon
You can make 12 cupcake size muffins or a loaf pan
Bake at 350 for 20-25 minutes, when knife comes out clean.
