If you’re a little Bored & not sure what to make for dinner, try my BOARD!!! This board is in honor of Queen Elizabeth on her 95th birthday weekend celebration!!!! Cheers!!!
I love a non-traditional meal that consists of my favorite veggies, nibbles, lovely wine, with delicious dips and spreads! Overflow your board with colorful sliced and diced vegetables, some dried fruit, marcona almonds, crackers, baguette, & perhaps some beautiful red or green grapes. Pick your favorites!
Hummus
Ingredients:
2 cans of chick peas, rinsed well.
1/2 cup Tahini
4 medium/large cloves garlic
2-3 lemons juiced
3 teaspoons sea salt
1 teaspoon ground cumin
3 tablespoons olive oil
Directions:
Rinse and drain chickpeas
Put tahini and lemon juice in your food processor/blender & blend one minute. Scrape sides and blend 30 more seconds
Add 2 tablespoons of olive oil, minced garlic, salt, cumin & half of the chickpeas. Blend well
Add remaining chickpeas, additional tablespoon olive oil and blend well
Taste & add a pinch of salt or a little more lemon juice if you like
White Bean Dip
Ingredients:
1 can white beans (I use cannellini) rinsed and drained
1/2 lemon juiced
1.5 cloves garlic
1 scallion diced
1/2 teaspoon ground cumin
1/2 teaspoon sea salt & pepper
4-5 colored grape tomatoes
small handful of parsley chopped
Directions:
Blend well all ingredients in food processor EXCEPT tomatoes, scallion & parsley
Scoop out mixture and place in favorite bowl
Chop tomatoes, dice scallion, and chop parsley and place on top of your bowl of goodness!
Lindsey’s Famous Guacamole, Ole!
Ingredients:
2 ripe avocados
Juice of 1 lime and 1/2 lemon
2 cloves of minced garlic
Couple shakes of Cayenne pepper
Salt & pepper to taste
Small bunch fresh cilantro
Directions:
Cut avocados and place in bowl
Add juice of lime & all spices.
Mash with potato masher or fork to chunky consistency
Top with fresh cilantro
Salt & pepper to taste
Enjoy these delicious dips and spreads with your favorite veggies, cracker, bread, fruit…..anything & everything you LOVE!
