1 cup diced English cucumber
2 cups chopped cherry tomatoes
2 ripe avocados chopped
1/4 red onion minced
1 can chickpeas, rinsed well
Dressing:
Juice of 2 lemons
1/4 cup olive oil
1/4 fresh oregano leaves, chopped
1 teas. salt
1 teas. fresh ground pepper
1 teas. dijon mustard
1 teas. maple syrup
Add all ingredients ( except dressing) into a large glass bowl. Toss
Add dressing and toss
Enjoy!!!!! This is great to have with fresh hummus & pita, and perhaps another salad like my Tantalizing Tabbouleh!
