Gazpacho is a Spanish style soup that uses fresh tomatoes, other vegetables & spices to be served cold! It’s a refreshingly delicious dish!
4 large tomatoes rough chopped ( I bought fresh from local farm)
1 English cucumber rough chopped
1/2 Vidalia onion chopped
2-3 cloves of garlic
1 celery stalk chopped
1 yellow pepper chopped
1 tablespoon lemon juice
3 tablespoon red wine vinegar
1/2 teaspoon salt
1 teaspoon fresh parsley
1 teaspoon fresh basil
Croutons
Directions:
You will need a blender/food processor and make in batches
Place half of all vegetables in blender and puree.
Place in a bowl
Blend remaining vegetables with red wine vinegar & salt
Pour into bowl and chill in fridge for 10-45 minutes
Bowl up and sprinkle some fresh parsley & basil & a few croutons!
