Apple Critter sounds a little off considering I don’t eat critters! The name came while throwing together a bunch of goodness from my pantry to create a delicious healthy dessert. In my tired brain I was thinking of memories of eating sugary apple fritters deep fried in tons of butter….and when asked what the heck I was making the name “Apple Critter” rolled off my tongue. HAH!
It’s pretty darn easy and if I do say so myself, AMAZING!
4 Fuji apples (organic)
1/3 cup organic raw chopped walnuts
1/2 cup dried organic cranberries
Juice of 1/2 lemon
1 tablespoon cornstarch
1 tablespoon ground cinnamon
1 teaspoon sea salt
1/2 stick melted vegan butter, plus 2 tablespoons
2 tablespoon coconut sugar
Directions:
Peel and slice apples and put in baking dish
Add lemon to apples to toss & coat
Toast walnuts in pan until golden, add to baking dish & stir
Add cranberries to dish & stir
Mix flour and oats in a bowl with cinnamon & corn starch, add melted butter
Add above to baking dish and stir coating apples and blending well
Drizzle 2 additional tablespoon melted butter to the top, and a couple shakes of cinnamon over top.
Bake at 400 degrees for 30 minutes!
This is wholesome, so delicious & satisfying! Feel free to mix in whatever nuts or dried fruit!
