This is designed for all of us who need an easy dinner to throw together in minutes. I like to do some prep over the weekend — make a double batch of a grain like Farro used in this video to add to a salad. Basmati rice & quinoa are also wonderful options.
Buy a box or two of pre-washed salad greens — whichever you prefer. Chop in advance your favorite veggies, & some you might not usually use like a sugar snap pea, or daikon radish, or can of black olives or seasoned croutons. Toast your favorite nut ( I use a minimum of 1/4 cup per person) my favorite is almonds. Make LindseyLicious Viniagrette & enjoy~
You can have a bowl of soup or heat up a baguette of french bread.
At the end of the day — cut yourself some slack. We can’t be rock stars all the time.
