1 medium sweet potato baked at 400 for 40 minutes aprox. (check till knife pierce through easily)
1/2 cup sweet corn ( can)
1/2 cup black beans rinsed (can)
Mango Salsa (combine below in a medium bowl and salt & pepper)
1/2 Avocado chopped
1/2 Jalapeno pepper diced
1/2 cup Mango chopped
1 tablespoon on diced red onion
Juice 1/2 lemon & 1/2 lime
Cut sweet potato in half, salt & pepper
Add your corn and black beans
Add Mango Salsa
