Fresh Tomato Sauce

Let's Get Cooking!

Ingredients & Recipe:

2 tablespoons Olive oil
4 cups mixed colored grape sweet tomatoes
Couple pinch of salt
2 tablespoon Nutritional yeast
4 cloves minced garlic
2 teaspoon tomato paste
1/4 cup water
8 large Basil leaves chopped
Box 8 ounce Red Lentil pasta, or Banza Chickpea
2 cups fresh broccoli florets
Fresh plant-based parmesan cheese

Directions:

Add olive oil to sauce pan, heat
Add tomatoes and couple pinch of salt
Add nutritional yeast, stir
Add 1/4 cup water and stir
Add basil & tomato paste, stir well.
Cover & simmer 30 minutes
Chop broccoli
Boil water and add pasta– cook 2 minutes shy of package directions
Add pasta to sauce, stir
Add as much parmesan cheese as you LOVE!
When ready to eat, add broccoli and stir
Bowl up! MANGIA~
